Hi Tatum! I have to pipe in with the GF sourdough advice!! You *can* start your own starter, but it's going to take a while to get it to turn over. I've had the most success with using a little bit of buckwheat flour in mine (something about higher protein content etc...) BUT, I really suggest just ordering this one. It takes a couple days to get it going.
I have a whole post on GF sourdough, and have been getting it to work successfully for a few years now! I think it's actually easier than regular, bc the process is a bit more streamlined. And my kids now complain about store bread so I count it successful ;)
